What Is Vacuum Packaging?
Vacuum packaging is a protection method based on removing most of the air from inside the bag so the packaging film wraps tightly around the product. Removing most of the oxygen slows oxidation-driven spoilage and the growth of aerobic microorganisms, extending shelf life significantly compared with standard packaging.
PAKKORA's Vacuum Packaging Range
PAKKORA's vacuum packaging bags are PA+PE (nylon/polyethylene) based and are produced in a 2- or 3-layer high-barrier structure; they are available as rolls or pre-cut bags, and are food-contact safe and BPA-free. The multi-layer structure reduces oxygen and moisture permeability compared with a single-layer film, delivering a longer shelf life.
Surface Options
Vacuum bags can be produced with a flat or textured/embossed surface. A textured surface lets air escape more easily along its channels during vacuuming and is preferred for irregularly shaped or sharp-edged products, while flat-surface bags are used mainly for smooth-edged products and where an attractive presentation is the priority. Transparent, coloured, and printed/unprinted options are chosen according to product visibility or branding needs.
Bag-Type or Thermoforming?
In standard bag-type vacuum packaging, the product is placed into a pre-made bag, which is then vacuumed and sealed at the opening. In thermoforming vacuum packaging, a bottom film is softened with heat and shaped by a mould into a cavity fitted to the product; once the product is placed in this cavity, a top film (vacuum top-sealing film) closes over it. The thermoforming method delivers faster, more consistent results on high-volume, standardised production lines, while the bag-type method offers more flexibility for lower volumes or variable product sizes.
Sous Vide and Cooking Bags
Sous vide vacuum bags are made from a special heat-resistant film structure suited to long, low-temperature cooking in a hot water bath; because a standard vacuum bag can deform at these temperatures, cooking-safe bags need to be specified separately. Freezer-safe bags, in turn, require a film structure that won't turn brittle or crack at low temperatures; both use cases should be evaluated separately when choosing a bag.
Shrink Vacuum Bags
When the air is removed, a standard vacuum bag settles loosely around the shape of the product; a shrink vacuum bag, by contrast, is passed through a brief hot water or steam bath after vacuuming so that it shrinks down to fully follow the product's contours. This gives an especially tight, gap-free presentation for meat and deli products.
Industrial Use
Vacuum packaging is not limited to food products; moisture- or oxygen-sensitive metal parts, electronic components, and certain chemical products can also be protected against corrosion and moisture damage with vacuum packaging. In these industrial applications, barrier performance can carry a different set of priorities than in food applications, weighted toward puncture resistance and moisture barrier rather than flexibility.
Choosing the Right Bag
Choosing the right vacuum bag should be based on whether the product has sharp edges or bones, whether it will be used for cooking or freezing, and whether transparency or branded printing is the priority for final presentation. For industrial products, the priority is usually maintaining the moisture and oxygen barrier for longer than in food applications, since storage periods can be far longer than for food products.
Storage and Shelf Life Expectations
Vacuum-packaged products hold onto their shelf-life advantage longer when stored in a cool, dark environment; direct sunlight or temperature fluctuations can speed up spoilage of the product inside even if the bag itself stays intact. To confirm that vacuum quality hasn't degraded over time, it's recommended to periodically check bags for any sign of swelling or loss of seal tightness.
Common Mistakes
- Choosing the wrong bag type: Using a standard vacuum bag for sous vide cooking can cause the bag to deform or leak at high temperatures.
- Using a flat bag for sharp-edged products: A flat, untextured bag increases the risk of puncture during vacuuming when packaging products with bones or sharp corners.
- Insufficient vacuum: When too much air remains inside the bag, oxidation and shelf-life reduction happen faster than expected.
